Recipe: Cheese and Vegetable Quesadilla

What You’ll Need:
- 2 whole-grain/whole-wheat tortilla
- 1/4 cup thinly sliced white onion (Bryant Farms)
- 1 tablespoon extra-virgin olive oil
- 1/2 cup shredded Kickapoo cheese (Ludwig)
- 1/2 a large tomato, sliced (Flat Rock Farms)
- Small amount of fresh herbs (Van Antwerp)
- 1/2 cup of peppers in a variety of colors (Biltz Greenhouses)
- Dash of salt and pepper
What to Do:
- Heat the olive oil in a pan with medium heat
- Sautée onions until mostly translucent
- Scoop the onions from the pan into a bowl
- Place the pan back, and lay out one tortilla on it
- Shred the cheese and sprinkle it on the tortilla
- Evenly spread the rest of the ingredients over the cheese
- When the cheese has melted about halfway, place the other tortilla on top
- Flip the quesadilla and lightly brown the other side
